Describe the feature you'd like
We are using BookStack at work to write guides on several internal projects but we'd like support for having different "branches" of a certain book.
For example, right now, one of our projects is at version 1.8 but we are releasing version 2.0 pretty soon but we can't really update our guides without overwriting the guides for older versions (which will still be supported for a year)...

Describe the benefits this feature would bring to BookStack users
Allowing users to have multiple vwesions of a book without having to create the new book from scratch.

Additional context
Could be implemented along with #776

Thanks for the request @FinlayDaG33k, but I'm going to close this off since the desire has been fairly low relative to the high complexity that this would likely introduce, and since some of the reflected desire here may be solved by the ability to copy books which was added some time after this was opened.
