Describe the feature you'd like

Currently watching can notify for creation, change and comments, but there's no notification in the event when a page, chapter or page is deleted.

In some scenarios this could be considered an important change.

The existing watch text is as follows:

Notify upon all new pages and page changes.

Deletions could fit into that as a a "page change" but this is specific to pages, wheras you'd probably want to know at a book/chapter level too, and not be notified of each individual page on book/chapter deletion, although you'd probably expect to know of just a page deletion upon parent book deletion.
We also have to consider that content (in most cases) will be in the recycle bin, which could change wording used.
Therefore this is a little more complex than existing notification scenarios.

Describe the benefits this would bring to existing BookStack users

Will allow users to know when content, which they consider important enough to watch, has been deleted.

Can the goal of this request already be achieved via other means?

You could make use of the existing activity and audit logs to know of deletions.

It could also be possible to use webhooks or other integration options to list/notify of deletions via external means.
