Thanks @cdrfun for answering! Will therefore close this off.
Looks like translations have been provided for (non-informal) de: https://github.com/BookStackApp/BookStack/pull/5637/files#diff-26bb4caa79d06d3039c85e19f14c4700d7bec648a3c2a6f0950dc9c5b936ea8c

But they didn't make it for the main feature release, but would be part of the next patch release.
